Fun Facts!! -Approx. 11 billion pounds of coffee are consumed every year while 7 million tons of green beans are produced world wide. -Almost all of it is hand picked All coffee is grown within 2000 miles of the equator. An acre of coffee trees produces roughly 10,000 pounds of coffee cherries. That equates to nearly 2,000 pounds of beans after its processed. -No coffee is grown in the contiguous United States. Hawaii and Puerto Rico do produce small crops. -41% of Americans drink coffee daily -Mc Donald's restaurant sells, by a substantial margin the most brewed coffee in the US and the world -Number of specialty coffee houses in 1989: 585 / 2003:17,400 -Germany surprisingly is the world's second largest consumer of coffee in terms of volume at 16 pounds per person a year. With over 43% of drinkers putting sweetener in their brew compared to 23% here in the states. -Until 1870's the majority of coffee was roasted in a pan over a fire. It wasn't until fairly recently that batch roasting became popular.

High Rise philosophy on Coffee The main factors in coffee roasting are Freshness and Quality. Freshness is what sets High Rise apart from most other roasters. The moment coffee comes out of the roaster it begins to de-gas and decompose like any other perishable item. Whole coffee beans maintain peak flavor and freshness for only two weeks. Many consumers are fooled into thinking that this process can be stopped with vacuum packaging or injecting inert gasses into the bags. However the hard science shows these procedures make little difference in preserving the complex composition of oils and compounds that are so key in maintaining a roasted bean's quality. Imagine roasting is analogous to brewing beer, micro-breweries are always producing finer products than their mega-brewery counterparts. The larger producers simply cannot ensure the freshness and quality the smaller more detail oriented roasters can. We roast in small frequent batches in order to ensure the utmost quality and freshness. Organics and Fair Trade Organics: We carry 12-15 types of organic beans at any one time. They are all Grower Certified Organic this means the farms and the beans have gone through a rigid inspection process examining the soil and water contents and ensuring that herbicides and pesticides are not used. Fair Trade: TransFair USA is the organization that certifies products fair trade. What this certification indicates is that these beans come from farms that earn a fair price for their product, trade is directly eliminating any middlemen, International Labor Laws are being observed, and that all crops are grown with a focus on preserving the environment.
